Southwestern Skewers

This recipe is really good during a summer cookout. This recipe serves 4 people. The ingredients needed are
1 8 ounce bottle of Italian salad dressing
10 minced garlic cloves
1 teaspoon of white or black pepper, chili powder, ground cumin, paprika
1/2 teaspoon cayenne pepper
1 medium green pepper, cut into 1 inch pieces
1 medium sweet red pepper, cut into 1 inch pieces
1 medium onion, cut into 1 inch pieces
8 large fresh mushrooms
8 cherry tomatoes
1 pound boneless skinless chicken breasts, cut into 1 inch pieces

First, in a large bowl combine Italian dressing, garlic, White or black pepper, chili powder, cumin, paprika, and the cayenne pepper. Pour half of the marinade into a ZIPLOC bag and add the vegetables, seal the bag and turn around to coat. Pour the remaining marinade into another ZIPLOC bag and add the chicken. Seal the bag and turn around to coat. Refrigerate the vegetables and chicken for at least 2 to 3 hours.
Next, place the vegetables and the chicken on the skewers. Then coat the grill rack with non-stick cooking spray before turning the grill on. Drain the chicken, discard the marinade. Drain the vegetables, reserve marinade for basting.
The last step, grill the skewers, covered over medium heat, for 3 minutes on each side, turning frequentely or until chicken is no longer pink and the vegetables are tender, basting frequentely with the reserved marinade.

Sloppy Sandwiches

These were really good probably in my top ten favorite meals. Though you probably want to be familiar with dough before hand because I found that part very difficult, though it wasn't nearly as messy as the Spagetti Calzones. The ingredients you need are 8 ounces of groung beef(I used ground turkey because it is healthier)1 packet(1.31 oz) sloppy joes seasoning mix(I like McCormick)1 6 oz can of tomato paste, 1 large egg, 1 tbsp of water, all-purpose flour, 1 16.3 oz can of Pillsbury refrigerated biscuits(I like the extra flaky ones) and 1/2 a cup of shredded mozzarella cheese. The first thing you do is preheat the oven to 350 degrees F. and cover a baking sheet in tin foil. The second thing you do is mix together the meat and seasoning in a medium saucepan over medium high temperature. Cook and stir for about 10 min. or until meat is browned, then stir in the tomato paste until well combined, remove the saucepan from the heat. The third thing you do is in a small bowl combine the egg and water witha fork. The fourth thing you do is lightly sprinkle flour on a flat surface and roll out the biscuits into 4 inch circles. Put flour on both sides of the biscuit so that they don't stick. The fifth thing you do is spoon 2 tbsp of the meat mixture and 1 tbsp of the cheese onto one side of the biscuit. Using a pastry brush, brush some of the egg mixture onto the edges and fold it over to make a half cirlce. Press the edges together to seal them. Place the sandwiches on the prepared baking sheet about 2 inches apart. Lightly brush the top of each sandwich with the egg mixture. The sixth thing you do is place the baking sheet in the preheated oven. Bake for 13 to 15 min. Using the oven mitts remove from the oven and let it cool for 3 min. And Serve.

Spaghetti Calzones

This was really good. But it was messy to make. The ingredients you need to make this recipe are Pillsburry Pizza Crust Dough, 1 large egg, 1 tablespoon of milk, cooking spray , peperoni, flour, and 14.3 oz. of leftover spaghetti or spaghetti and meatballs in a can. You preheat the oven to 400 degrees and you spray a baking sheet with cooking spray, Roll out the pizza dough into about a 15 by 15 square and then cut it into 4 equal pieces. Place 1/4 of a can of Spaghetti and Meatballs and the desired amount of peperoni then repeat with all of the pieces of dough. In a small bowl mix together the egg and milk. Using a pastry brush, brush the edges of the dough and fold of and pinch together. Then, using a spatula transfer to the calzones to the baking sheet and let bake until 18-20 minutes.

Fried Rice

This really easy. Not the healthiest thing ever but it tastes really delicious and its easy. You just cook the rice, cook the bacon, crumble up the bacon, cook the eggs(scrambled) and mix it all together and add a little soy sauce. Then you eat.

Meatballs and Gravy

This recipe is really easy to make. It is just Cream of Mushroom Soup and pre-cooked meatballs and a little Kitchen Bouquet for coloring and flavoring. You put that mixture into the crockpot and check it every once in a while until it is cooked and then it is complete.

Baked Chicken Pasta

This was an odd recipe but very delicious. I made it for dinner last night. It is basically elbow macaroni noodles, pre-cut, pre-cooked chicken strips, diced tomatoes, sliced black olives and Prego Alfredo sauce, with a bread crumb and olive oil mix on sprinkled over the top. It was really good the two most aggravating parts were the time it took to cook the noodles and the time it took to bake in the oven. It makes 8 servings so you might just need to cut it in half. It was really easy to make it just took a while.

Mac and Cheese Lasagna

This is definitely the best lasagna in the whole wide world. It is just mac and cheese, ground beef, prego tomato sauce and mozzarella and Parmesan cheese. Cook the mac and cheese according to the box, brown the ground beef and then layer all of the ingredients like a lasagna. Then bake it in the oven until the cheese is melted and that is it. It is extremely easy to make and so good.
